I enjoy visiting apple orchards, picking pumpkins and eating apples that were picked just minutes before. Fresh ripe, crunchy apples are one of my greatest flavor experiences every year. Autumn for us, means being outside, carving pumpkin and spending time appreciating this beautiful world in which we live.

The one thing I do every year, even though I tell myself I wont, is buy too many apples. I always think we can eat them right away. And sometimes we can. The first time I made these they were like Apple Pie meets Blondie. The bar had the consistency of a cake like brownie but tasted like apple pie. For the last many years this has been one of our must make Autumn treats! So I kept the start simple and made these yummy vegan Apple Pie Blondie Bars that are quick and easy to make and perfect for any occasion!

Not only to use up leftover seasonal apples but also to get a delicious cinnamon-spiced Apple pie dessert in a matter of minutes! These vegan Blondies are like apple cake but with the rich, dense and fudgy-like consistency of brownies. So if you love the taste of vegan apple pie or cake and the texture of brownies, these blondie bars will quickly become your favorite!

Actually, a blondie is a blonde version of brownies but with the flavors of vanilla and other spices instead of the traditional dark chocolate. As mentioned before, this recipe is super quick and easy! You need just Xx simple ingredients and 10 minutes to prepare the batter! Thank you so much for your feedback! I made this recipe with coconut oil instead of butter, and flax-egg instead of apple sauce. Because it has coconut oil, I take it out of the fridge for a few minutes before eating it, and it has the perfect consistency.
